We are on a 4-day work week for the summer only. Can I simply uncheck Friday in business hours during this time and check it again in a few months or will this affect SLAs outside of summer?

Yes, you can uncheck Friday from your business hours for now and then add it back to your business hours when needed. As and when you update tickets post the change in business hours, the SLAs get calculated and will be updated automatically for any unresolved tickets.
